Aye Olly!

Do you like aioli? It's a garlic mayonaise. Delicious on most things, even roast beef. Is anyone else hungry at this time of morning?

Last night I made some delicious burgers and adapted an aioli recipe to suit my own palate. It made the burgers taste even better than the ones from grill'd!

Often aioli is offered to dip chips in at snooty cafes. My aioli recipe has a lot of zing though so perhaps it's not exactly suited to that but better used as a complimentary condiment to meat.


Rosemary and Cracked Pepper Aioli

2 clove of garlic crushed
1 teaspoon of sea salt
2 egg yolks
1 cup extra virgin olive oil
2 tablespoons water
1 1/2 tablespoon of french's mustard
1/2 tablespoon of finely chopped fresh rosemary
Freshly cracked pepper

Using a kitchenaid mixer (with whisk attachment) speed 10 or a food processor whizz together the garlic, salt and egg yolks.
In a super thin stream slowly add the oil to form a thick mayonnaise.
Pop it into a bowl and mix in the water, mustard, rosemary and some good cracks of black pepper.

Use aioli instead of butter on your burger bun. This recipe makes a lot, perfect for your next big bbq!
