Do you have some oats left over from your porridge making days of winter? Here's a fun way to use it up.

Triple Delicious Chocolate Chip and Oatmeal Cookies

            1 1/2 cups packed brown sugar
            1 cup butter or margarine, softened

1 teaspoon vanilla
1 egg
2 cups quick-cooking oats
1 1/2 cups plain flour
1 teaspoon bicarbonate soda
1/2 teaspoon salt
1/3 cup dark chocolate chips
1/3 cup milk chocolate chips
1/3 cup white chocolate chips
1 cup chopped nuts, if you like (macadamias would be especially delish!)
Heat oven to 160 ff
Cream the butter and sugar in a bowl using an electric mixer
Add the vanilla and egg till light and fluffy
Add the remaining ingredients
Onto a greased tray drop tablespoons full of dough about 2 inches apart
Bake for 9-11 minutes
Let the cookies cool slightly before moving them to a rack to cool completely.
