yours and theirs pasta




Do you ever offer to cook dinner for some one else and then think "Uh oh! What can I cook?". I really enjoy offering to cook dinner, I know how good it feels to be on the receiving end of a delicious meal that I didn't have to cook. Heavenly!
Instead of doing double duty in the kitchen making their dinner delivering it then coming home to cook for your bunch too this pasta recipe is enough for about 10-12 people total. Sounds like a lot but this is not a fiasco to cook. I promise! This meal also seems to be fussy kid proof (so far) which is a dream come true.

You're and Their's Pasta

1 tbsp olive oil
1 onion chopped fine
3 cloves of garlic crushed
250 g bacon chopped fine
800g chicken breast fillet chopped into small cubes (kid bite size)
500g mini fusilli pasta
1 cup sour cream
300ml cream
3 cups finely grated parmesan cheese (aged at least 18 months)
2 tbsp fresh chives chopped finely
salt and fresh cracked pepper to taste

pop your oil into the pan
put the pan onto a medium heat
once it's come to heat add the garlic and onion stirring till the onion softens and becomes a little clear
add the bacon and stir cooking until the fat has *rendered some what
remove the bacon and onion from the pan and cook the chopped chicken in batches being sure it's cooked all the way through
while cooking the chicken put a saucepan of water on to boil for the fusilli and cook the pasta when the water comes to the boil
once the chicken is all cooked add back the bacon and onion and the sour and regular cream stirring so everything is covered in that dairy deliciousness!
time to transfer to a large mixing bowl
drain the pasta when it becomes al dente and add it to the large mixing bowl along with the chicken bacon and  onion
add  2 cups of finely grated parmesan cheese along with the chives and season with salt and pepper
stir again then divide the meal amongst two serving dishes
finally sprinkle the remaining parmesan cheese on the top of the pasta and any little scraps of chives you may have left over.
All done!

*render - when the fat melts away from the meat
* your friend can choose to reheat the meal gently in the microwave or pop it into the oven for 20-30 mins on 170 covered
* for a dairy free alternative add your favourite pasta sauce instead of sour cream and cream, also don't add the cheese
*Is this freezable? I haven't tried but wouldn't have any issues with that myself. Reheat in the microwave or the over on 180 (160ff), time determined on the portion size.
