Chorizo and potatoes

Last week we had the pleasure of dining with our dear friends Rick and Fran. Fran is one of those women who can put a lettuce leaf on a plate and make it looks snazzy and delicious! She's a real kitchen genius, I really covet her flair with food. The following is a scrumptious potato dish she served up! I had 2 helpings and felt no shame! It was mouthwatering, moreish and completely satisfying.

Chorizo and potatoes
2 chorizo (Fran recommended Primo brand)
1.2kg small potatoes
2 cups sour cream
1/2 cup chopped capsicum (red, orange or yellow)
1/4 cup chopped parsley
salt to taste

boil the potatoes whole till tender and allow to cool
cut the chorizo length ways in half then length ways in half again then chop chop chop till they are in small pieces about the size of a corn kernel
fry the chorizo in a dry pan until the fat renders out and the chorizo crisps up a little
lay the potatoes into the serving dish
smooth all the sour cream onto the potatoes and season with salt
sprinkle on the parsley then capsicum and chorizo
eat up buttercup!
