retrolicious fried rice



I used to think that fried rice was tricky to cook, not all that healthy and fell into that dorky food category I've talked about before.  It's actually not too bad, little oil heavy on carbs but you'll be ready to run a race after this! It's pretty cruisey recipe, easy for a beginner cook! Another thing is it's SO delicious, the thing I love even more is that it reheats like a dream and it's a great "forgot to defrost meat" meal! You can dress it up or down and is a great way to use up any left over chicken from a roast chicken you may have in the fridge.

Retrolicious Fried Rice

2 tbsp olive oil
3 cloves garlic crushed
3 rashers of bacon
4 spring onions chopped finely
1/2 small cooked prawns
1/2 cup cooked chicken
3 cups cooked rice
1/2 cup corn kernels
1/2 cup peas
1 tsp sesame oil
salt to taste


heat oil and garlic in a large frying pan
fry the bacon
add the spring onions and cook for about a minute until they start to soften a little against your wooden spoon
in a large bowl mix all remaining ingredients
add to the pan and mix about until it's all heated through, mixed nicely
salt to taste
serve up your scrumptious creation!
PS if you're keen add a little chopped chilli or chilli flakes for a kick. Goes beautifully!
