salted caramel popcorn

I don't think salted caramel is one of those fad combinations that will wain over time. It's so classically delicious! This little popcorn treat is very quick to make and eaten while the caramel is still slightly warm is perfection! This recipe makes enough for you and your neighbours who will worship you ever after you deliver this to their door.

Salted Caramel Popcorn

approximately 6 cups of popped corn
1 t fine salt
125g butter
3/4 C golden caster sugar (raw caster sugar on some labels. White caster sugar is fine too)
2 T honey

If you have a popcorn maker pop two measures of corn into a large bowl that's big enough to mix in. Salt the popcorn and stir gently being careful not to break the delicate corn.
Set a small saucepan to a medium heat and add the butter, sugar and honey.
Stir until melted and allow to bubble until it reaches a rich caramel colour.
Quickly and carefully pour over the top of the salted popcorn.
Stir carefully (hot caramel is like napalm!) then allow to cool.
